Healthy Millionaire’s Shortbread

I hope you enjoy this healthy version of the classic millionaire’s shortbread. It is vegan, naturally sweetened and utterly delicious.

It is a recipe that I go back and back to as it is surprisingly easy to make and perfect for this warmer weather (Keep it in the freezer so it is nice and cold when you go to eat it).

Disclaimer: This is titled ‘healthy’ but by no means demonizes the classic recipe. Enjoy both when you feel inclined!



200g Ground Almonds;

50g Rolled Oats;

1 Tbsp Coconut Oil;

1 Date;

Splash of Milk.

Caramel Layer:

250g Pitted Dates;

2 Tbsp Almond Butter;

1 Tsp Vanilla Extract;

3 Tbsp Milk.

Chocolate Topping:

200g 70% Dark Chocolate.

To make the base: Simply blend the ‘base’ ingredients in a food processor and press into a lined, rectangular baking tray. Place in the freezer for a few minutes, whilst you make the caramel.

To make the caramel: Place the dates and other ingredients in the food processor and blend until smooth. Have a try and add a touch of vanilla or milk, to taste. Spread over the base evenly and pop back in the freezer.

To make the chocolate layer: Melt 70% dark chocolate in a glass/heat proof bowl over a pan of boiling water. When melted, pour over the date layer and spread evenly. Pop back in the freezer, again and try to wait until it is set.

Once set, cut into squares and dig in!
